3 Let's Cook (Try not to burn the garlic)

Prep & Armor Up

Clean the crab. Quarter the body. Crack the claws (so the sauce gets inside). Dust lightly with cornstarch and deep fry briefly until red. This keeps the juices inside.

Sauté the mountain of minced garlic and shallots until golden. DO NOT BURN IT, or it will taste bitter like your ex's heart.

Add tamarind juice, sugar, fish sauce, chili. Simmer until it thickens into a glossy glaze. Taste it. It should make you squint (sour) then smile (sweet).
