You might be tempted to just use tap water. Please don't. In Vietnam, we use fresh coconut water not to make the dish taste like a dessert, but to enhance the crab's natural savoriness (umami).

The Essentials

  • 2 Large Live Crabs: Since there is no sauce to hide behind, freshness is non-negotiable.
  • 2 Fresh Coconuts: Get the young ones with plenty of sweet water.

  • Lemongrass: 3-4 stalks, smashed. This adds a citrusy freshness.
  • Purple Shallots: Just a few to round out the flavor.

The "Spa" Prep

Clean the crab thoroughly with a brush. Arrange smashed lemongrass at the bottom of your pot (this creates a fragrant bed for the crab).

Place the crabs on top of the lemongrass. Pour fresh coconut water until it barely covers the crabs. Add shallots and a pinch of salt.

The Steam

Cover tightly. Bring to a boil, then reduce heat. Steam for 15-20 minutes depending on size. The shell will turn a vibrant, sunset orange.

Steamed crab is subtle, so the dipping sauce must be sharp. Mix Sea Salt + Black Pepper + Fresh Lime Juice + Chili. This mixture (Salty + Sour + Spicy) cuts through the sweetness of the crab meat perfectly.
